Position Overview:
Responsible for delivering consistently high-quality cuisine, presentation, and flavor across dine-in services, events, and pop-ups, thereby achieving exceptional guest satisfaction. This role involves managing food purchase specifications, recipe development, kitchen operations, profit margins, stock control, wastage management, food ordering, and maintaining the highest standards of food quality and sanitation. The position also entails supervising staff, conducting training to bolster skills and knowledge, ensuring customer satisfaction, and overseeing the seamless execution of floor operations.
Responsibilities:
- Uphold and set high-quality standards for food preparation, quality, and presentation.
- Adhere to the culinary direction set by management and ensure consistency across all dishes.
- Directly cook or supervise the cooking of items requiring proficient preparation skills.
- Develop standard recipes and techniques for food preparation and presentation to ensure high quality and to minimize food costs; exercise portion control and assist in setting menu prices.
- Approve requisitions for products and other necessary food supplies.
- Enforce high standards of sanitation, cleanliness, and safety throughout all kitchen areas.
- Establish controls to minimize food and supply wastage and spoilage.
- Maintain cool rooms, fridges, freezers, and dry stores in a clean and safe manner, complying with health and company regulations.
- Implement training for all food preparation employees on safety, sanitation, and accident prevention principles.
- Schedule and coordinate the work of chefs, cooks, and other kitchen employees to ensure economical and technically correct food preparation within budgeted labor costs.
- Participate in food and beverage staff and management meetings and ensure kitchen representation in service lineups and meetings.
- Consult with Food & Beverage, Front Office, and Marketing Managers about food production for special events.
- Ensure proper staffing for maximum productivity and quality standards.
- Evaluate food products to guarantee that quality standards are consistently met.
- Interact with food and beverage management to ensure food production exceeds the expectations of members and guests.
- Develop policies and procedures to enhance and measure quality; support safe work habits and a safe working environment at all times.
- Establish and maintain a regular cleaning and maintenance schedule for all kitchen areas and equipment.
- Precisely control food costs and address any related issues.
- Foster a positive and supportive working environment, promoting respect and assistance across departments.
- Provide training and professional development opportunities for all kitchen staff.
- Maintain personal hygiene and grooming standards and ensure these are upheld in the F&B product department.
- Engage politely and graciously with customers and repeat customers.
- Perform other duties as directed.
