About the Role
We are looking for a capable and hands-on Food & Beverage Manager to join our growing hospitality group and support the development, pre-opening, and operation of new Food & Beverage concepts.
This is not only a daily outlet management role. The selected candidate will be involved from the early stages of concept development, operational planning, SOP creation, team recruitment, training, supplier coordination, launch preparation, and post-opening improvement.
The role is suitable for someone who enjoys building things from the ground up, creating structure, developing teams, and turning ideas into real, well-run Food & Beverage operations.
Key Responsibilities
Pre-Opening & Concept Development
• Support the development of new Food & Beverage concepts, including service style, guest experience, operational flow, and outlet positioning.
• Assist in translating business ideas into practical day-to-day operations.
• Prepare pre-opening plans, checklists, timelines, and operational requirements.
• Develop SOPs for service, opening and closing, hygiene, stock control, ordering, receiving, reporting, and daily operations.
• Coordinate with management, kitchen team, consultants, vendors, contractors, and suppliers during the pre-opening process.
• Ensure each project is operationally ready before launch.
Operations Setup
• Build practical systems for front-of-house and back-of-house coordination.
• Support menu development from an operational perspective, including service flow, preparation requirements, costing awareness, and execution consistency.
• Set standards for service quality, cleanliness, presentation, speed, and guest experience.
• Prepare operating tools such as checklists, logbooks, reports, training materials, and staff guidelines.
• Establish stock control, purchasing, receiving, inventory, and wastage monitoring procedures.
Team Recruitment & Training
• Assist in building the Food & Beverage team structure for each project.
• Support recruitment, selection, onboarding, and training of Food & Beverage staff.
• Train team members on service standards, product knowledge, grooming, discipline, hospitality, hygiene, and operational procedures.
• Develop supervisors and senior team members as the business grows.
• Create a working culture that is disciplined, professional, hands-on, and guest-focused.
Daily Operations After Opening
• Manage and supervise Food & Beverage operations after launch.
• Ensure consistent execution of service standards and product quality.
• Monitor staff performance, attendance, scheduling, grooming, and discipline.
• Handle guest feedback and service recovery professionally.
• Coordinate with kitchen, purchasing, finance, and management teams.
• Review daily sales, stock usage, wastage, and operational reports.
• Continuously improve operations after opening based on real conditions on the ground.
Cost Control & Reporting
• Monitor basic Food & Beverage cost control, including stock usage, wastage, spoilage, portioning, and inventory accuracy.
• Work with purchasing and suppliers to maintain product quality and cost efficiency.
• Support menu pricing, cost analysis, and profitability review.
• Prepare clear and practical daily, weekly, and monthly reports for management.
• Identify operational inefficiencies and propose practical improvements.
Requirements
• Minimum 3 years of MANAGEMENT EXPERIENCE in Food & Beverage, hospitality, restaurant, café, hotel, lifestyle venue, or related operations.
• Pre-opening experience is strongly preferred.
• Experience in concept development, SOP creation, team training, and operational setup is a strong advantage.
• Strong understanding of Food & Beverage operations, service flow, stock control, purchasing, inventory, hygiene, and cost control.
• Able to create structure, systems, checklists, and standards from scratch.
• Hands-on leadership style; willing to be present on the floor and involved in daily execution.
• Strong communication, discipline, problem-solving, and team management skills.
• Good sense of hospitality, cleanliness, presentation, and guest experience.
• Able to work in a growing company where systems are still being developed.
• Good command of Bahasa Indonesia; English ability is a plus.
• Willing to work in South Jakarta with trips around Indonesia.
Preferred Qualifications
• Experience in hotels, restaurants, cafés, clubs, lifestyle venues, or premium hospitality concepts.
• Experience handling multiple Food & Beverage formats or new outlet openings.
• Experience with POS systems, inventory systems, daily reports, and cost control.
• Comfortable working with owners, management, vendors, consultants, and operational teams.
• Able to balance creativity with discipline and financial awareness.
