A&M Co. Bistro Yogyakarta sedang mencari seorang Koki/Juru Masak/Cook/Commis di section Cold Kitchen bagian Pastry atau GDM yang berpengalaman untuk bergabung dengan tim kami.

Tugas & Tanggung Jawab Utama

  • Menyiapkan dan menyajikan menu cold kitchen seperti salad, appetizer, dressing, sandwich, dan cold dish lainnya sesuai standar resep (SOP).
  • Menguasai teknik dasar pastry & bakery (mixing, baking, whipping, decorating).
  • Mampu membuat berbagai produk seperti cake, tart, mousse, dan dessert plating.
  • Melakukan mise en place (persiapan bahan) sebelum operasional dimulai.
  • Menjaga kualitas, kesegaran bahan, serta tampilan (plating) setiap hidangan.
  • Memastikan seluruh bahan disimpan sesuai standar (FIFO/FEFO) dan suhu penyimpanan yang tepat.
  • Menjaga kebersihan area kerja, peralatan, dan bahan makanan sesuai standar hygiene & food safety.
  • Mengontrol penggunaan bahan baku agar efisien dan meminimalisir waste.
  • Bekerja sama dengan tim kitchen untuk memastikan kelancaran operasional.
  • Memastikan setiap pesanan disajikan tepat waktu dan sesuai order tamu.
  • Melakukan pengecekan kualitas bahan baku sebelum digunakan.

Kualifikasi dan Pengalaman yang Dibutuhkan

  1. Pendidikan minimal SMA/SMK atau sederajat (diutamakan jurusan tata boga/perhotelan).
  2. Memiliki pengalaman minimal 1 tahun sebagai Cold Kitchen/Pastry/Garde Manger di restoran atau hotel.
  3. Terbiasa melakukan mise en place dan menjaga konsistensi kualitas makanan.
  4. Memahami penyimpanan bahan makanan (chiller/freezer) dan standar food safety.
  5. Terbiasa menggunakan peralatan dapur cold section.
  6. Memahami standard recipe, portioning, dan basic food cost.
  7. Memahami standar penyimpanan bahan.
  8. Disiplin, bertanggung jawab, dan memiliki etos kerja yang baik.
  9. Mampu bekerja sama dalam tim kitchen.
