Kualifikasi Sous Chef

  • Pengalaman minimal 3–5 tahun di dapur profesional, termasuk sebagai Chef de Partie/Junior Sous.
  • Menguasai teknik memasak dasar hingga lanjutan dan food safety.
  • Leadership kuat, mampu membimbing tim dan mengatur operasional dapur.
  • Terampil dalam food costing, menu planning, dan kontrol kualitas.
  • Disiplin, cekatan, dan mampu bekerja di lingkungan bertekanan tinggi.

Jobdesk Sous Chef

  • Membantu Head/Executive Chef mengelola seluruh operasional dapur.
  • Mengawasi persiapan, proses memasak, dan penyajian agar sesuai standar.
  • Melatih tim dapur dan memastikan kebersihan serta keamanan makanan.
  • Mengontrol stok, order bahan, dan meminimalkan food waste.
  • Mengembangkan resep/menu baru dan memastikan konsistensi rasa.
  • Mengganti peran Head Chef saat Head Chef tidak hadir.
