Job Description:
- Monitor and control Food Cost, Beverage Cost, and Operational Costs to ensure they remain within the company’s budget.
- Monitor the usage of raw materials from purchasing, receiving, storage, and sales.
- Conduct regular stock counts and ensure physical stock matches system records.
- Analyze stock variances, waste, spoilage, and material usage.
- Prepare daily, weekly, and monthly Food & Beverage Cost Reports.
- Monitor purchasing prices and identify significant price fluctuations.
- Ensure all purchases, transfers, consumption, and wastage are properly recorded.
- Conduct menu costing and ensure menu pricing aligns with the company’s target cost.
- Analyze Actual Cost vs. Standard Cost and provide recommendations for significant variances.
- Work closely with Purchasing, Warehouse, Kitchen, Bar, Finance/Accounting, and Operations teams.
- Ensure compliance with SOPs related to purchasing, receiving, storage, inventory, and material usage.
- Identify potential cost leakages and recommend solutions to improve cost efficiency.
- Prepare cost analysis and reports for management review.
Requirements:
- Male or Female
- Experience in Cost Control, preferably in F&B / Hospitality
- Strong knowledge of Food & Beverage Cost, COGS & inventory
- Experienced in stock opname and cost analysis
- Familiar with recipe & menu costing
- Strong communication and coordination skills
