Job Desk (Duties & Responsibilities) – Chef de Partie
Food Preparation & Cooking
Prepare, cook, and present dishes within their specialty section (grill, sauté, pastry, etc.).
Ensure all dishes meet company and quality standards before serving.
Maintain consistency in taste, portion, and presentation.
Section Management
Supervise commis chefs or demi chefs in their section.
Organize and delegate tasks to junior staff.
Monitor workflow to ensure smooth kitchen operations.
Quality & Hygiene
Follow food safety, sanitation, and hygiene standards (HACCP).
Ensure proper storage, labeling, and rotation of ingredients.
Minimize waste and maintain cost control.
Collaboration
Work closely with sous chef and head chef to plan menus.
Assist in training and developing junior staff.
Communicate effectively with other sections to ensure timing and service standards are met.
Operational Duties
Ensure kitchen equipment in their section is well-maintained and used safely.
Help with stock control, inventory checks, and ordering supplies when necessary.
Adapt to special requests, dietary requirements, or last-minute menu changes.
Requirements – Chef de Partie
Education: Culinary diploma or equivalent professional training.
Experience:
Minimum 2–3 years in a professional kitchen, with at least 1 year as a demi chef or commis chef.
Skills:
Strong knowledge of cooking techniques and ingredients in their station.
Ability to work under pressure and manage time effectively.
Leadership skills to supervise and motivate junior staff.
Creativity in dish presentation and flavor combinations.
Personal Qualities:
High attention to detail.
Strong sense of responsibility and discipline.
Flexibility to work shifts, weekends, and holidays.
Good communication and teamwork spirit.
