CC's Grill is a growing charcoal chicken restaurant concept based in Uluwatu, dedicated to serving premium fire-grilled chicken with bold, authentic flavours. We bring together premium ingredients, chef-crafted recipes, and traditional fire-grilling techniques to create an exceptional dining experience. Every dish is carefully prepared and cooked over natural coffeewood charcoal, delivering a rich, smoky taste that cannot be replicated by gas or conventional grilling.

What You Will Contribute:
As the Sous Chef, you will support the Venue Manager in overseeing the daily kitchen operations, ensuring every dish meets CC's Grill's quality, consistency, and food safety standards. You will lead the kitchen team during daily operations, maintain efficient workflow, and ensure every meal is prepared with precision using our signature fire-grilling techniques.
You will play a key role in establishing kitchen operations during the pre-opening phase, developing kitchen staff, implementing SOPs, managing food costs, and delivering an exceptional dining experience that reflects the CC's Grill brand.
What You Will Do:
- Support the Venue Manager in managing the day-to-day kitchen operations.
- Supervise, coach, and motivate the kitchen team to ensure efficient and productive operations.
- Ensure consistency in food quality, presentation, portioning, and cooking standards.
- Prepare and oversee food production according to approved recipes and brand specifications.
- Ensure all food is cooked safely using CC's Grill's signature coffeewood charcoal grilling methods.
- Maintain high standards of food hygiene, sanitation, and workplace safety in accordance with HACCP and local regulations.
- Monitor food costs, minimise waste, and maximise kitchen efficiency.
- Manage inventory, stock rotation (FIFO), and ordering of kitchen supplies.
- Assist with menu implementation, recipe standardisation, and product development.
- Support recruitment, onboarding, and training of kitchen team members.
- Coordinate effectively with the service team to ensure smooth service operations.
- Support all kitchen pre-opening activities, including equipment setup, SOP implementation, and operational readiness.
- Ensure compliance with company policies, food safety standards, and operational procedures.
Who We’re Looking For:
- Minimum 3 years of experience as Sous Chef, Head Chef, Kitchen Manager, or similar leadership role
- Strong background in restaurant, café, or fast-casual dining operations
- Proven experience managing kitchen teams and maintaining consistent food quality standards
- Strong understanding of food cost control, inventory management, and kitchen budgeting
- Experience in recipe standardization and SOP development
- Excellent leadership, communication, and team development skills
- Strong problem-solving abilities and operational decision-making skills
- Hands-on leadership style with strong attention to detail
- Strong knowledge of food safety, hygiene, and sanitation regulations
- Familiarity with inventory management systems and kitchen reporting is an advantage
