What You Will Contribute:
As a Senior Cook at Zali, you will play role in leading daily kitchen operations while ensuring the consistent preparation and presentation of high-quality dishes. You will support the Chef de Partie in overseeing the daily operations of your assigned kitchen section while ensuring the consistent preparation and presentation of high-quality dishes.
Your expertise, leadership, and commitment to culinary excellence will contribute to upholding Zali Uluwatu's standards of quality, consistency, food safety, and guest satisfaction.
What You Will Do:
- Prepare, cook, and present menu items in accordance with established recipes and quality standards.
- Support the Chef de Partie in managing the daily operations of the assigned kitchen section.
- Ensure consistency in food quality, taste, portioning, and presentation during every service.
- Oversee daily mise en place and ensure all ingredients and stations are fully prepared before service.
- Provide guidance, coaching, and on-the-job training to junior cooks and kitchen assistants.
- Monitor food quality and ensure dishes meet the restaurant's standards before being served.
- Assist with in-villa dining service and accommodate special guest requests as required.
- Ensure compliance with kitchen SOPs, portion control, hygiene, sanitation, and HACCP standards.
- Support inventory control, stock rotation (FIFO/FEFO), and proper storage of food products.
- Assist in receiving, checking, and storing deliveries to maintain product quality and freshness.
- Minimize food waste by following proper preparation, storage, and portion control procedures.
- Maintain cleanliness, organization, and sanitation of kitchen equipment and workstations.
- Work collaboratively with the Chef de Partie and kitchen team to ensure smooth and efficient service.
- Report any equipment issues, food quality concerns, or operational challenges to the Chef de Partie.
Who We’re Looking For:
- Minimum 3–5 years of experience as a Cook or Senior Cook in hotels, resorts, villas, or restaurants.
- Strong understanding of food preparation techniques and kitchen operations.
- Experience supporting and guiding junior kitchen team members.
- Good knowledge of food safety, hygiene, sanitation, and HACCP standards.
- Strong organizational skills and the ability to work efficiently in a fast-paced environment.
- Excellent attention to detail with a commitment to consistency and quality.
- Good communication and teamwork skills.
- Positive attitude, strong work ethic, and willingness to continuously learn and develop.
- Flexible to work shifts, weekends, and public holidays as required.
