# Requirements for Senior Cook – Chinese Restaurant
For the position of Senior Cook at a Chinese restaurant, candidates must have experience and skills in Chinese cuisine, be able to manage a kitchen section independently, maintain food quality and consistency, and assist the Sous Chef and Head Chef with daily kitchen operations.
## 1\. Main Qualifications
- **Work Experience:** Minimum of 2–4 years of experience in Chinese cuisine. Previous experience as a Cook or Demi Chef is an advantage.
- **Education:** Minimum of a vocational high school diploma in Culinary Arts or a Diploma in Culinary Arts/Hospitality Management.
- **Cooking Skills:** Proficient in Chinese cooking techniques, including stir-frying, wok cooking, steaming, deep-frying, braising, and blanching.
- **Specializations:** Knowledge of Cantonese cuisine, Szechuan cuisine, Chinese seafood, dim sum, Chinese soups, and various Chinese sauces.
- **Wok Cooking Proficiency:** Ability to operate a wok properly, control cooking temperatures, and achieve the distinctive flavors and aromas of Chinese cuisine.
- **Food Preparation:** Ability to perform cutting, slicing, marinating, and portioning, as well as prepare ingredients according to restaurant standards.
- **Food Quality:** Ability to maintain consistent taste, texture, doneness, portion sizes, and food presentation.
- **Kitchen Operations:** Ability to manage a kitchen section independently and ensure all ingredients are prepared and ready before service begins.
- **Leadership:** Ability to guide Junior Cooks and Commis Chefs and assist the Chef de Partie in supervising the kitchen team.
- **Cost Control:** Knowledge of portion control, ingredient usage, FIFO (First In, First Out), inventory management, and food waste reduction.
- **Food Safety:** Knowledge of food hygiene, kitchen sanitation, proper food storage, temperature control, and HACCP standards.
- **Menu Development:** Ability to assist in developing new menus and follow the restaurant's established standard recipes.
- **Language Skills:** English proficiency is an advantage.
- **Work Attitude:** Disciplined, responsible, detail-oriented, efficient, proactive, able to work under pressure, and capable of working effectively as part of a team.
