Key Responsibilities
Floor Management
* Overseeing dining room service across shifts
* Managing queues, reservations, seating, and guest flow during peak times
* Handling guest complaints and real-time problem-solving
* Ensuring service standards and brand experience are consistent with the venue's positioning
* **HR / Staff Management**
* Recruiting, onboarding, and training front-of-house staff
* - Shift scheduling and attendance management- Performance evaluation, discipline, and, when necessary, offboarding
* - Building team culture and staff motivation
**Purchasing & Coordination with the Chef**
* Ordering and supplier management for non-food items (beverages, floor supplies, consumables)- Coordinating with the chef on food orders, product availability
* - Negotiating with suppliers and sourcing alternatives to optimize quality/price
* - Inventory management and waste reduction **Coordination with the Accountant**
* - Daily/weekly cash and sales reporting (POS)
* - Supporting reconciliation of costs, supplier invoices, and cash flow- Monitoring labor cost in collaboration with the accountant **Other Typical Duties**
* - Compliance with food safety, hygiene, and local regulations
* - Overseeing routine maintenance of the dining room, kitchen, and equipment (coordinating with maintenance/hotel staff)
* - Managing private events, group bookings, and collaborations with the hotel
* - Acting as the operational point of contact for the owner: periodic reporting on KPIs and issues Requirements
* - Previous experience as Restaurant Manager or Assistant Manager (min. 2-3 years), ideally in healthy/wellness, casual fine dining, or boutique hospitality settings
* - Experience managing a team
* - Working knowledge of food cost, P&L, and supplier management
* - Fluent English (written and spoken); Bahasa Indonesia
* - Familiarity with POS systems (Moka or similar)
* - Natural leadership, problem-solving under pressure, attention to detail
* - Availability to work shifts, weekends, and holidays"
