We are currently looking for a passionate and experienced Food Research & Development (R&D) professional to join our growing team and support menu innovation, product development, and food quality across our restaurant brands.
Job Responsibilities
1. Develop and innovate new food products, recipes, and menus according to each brand's concept and market trends.
2. Conduct recipe costing, food cost analysis, and product feasibility assessments to ensure profitability.
3. Perform recipe testing, product trials, and sensory evaluations to maintain consistent taste, texture, appearance, and quality.
4. Develop and standardize recipes, cooking methods, portion sizes, yields, and product specifications.
5. Apply knowledge of cooking techniques, ingredients, food science, and food technology in product development.
6. Research and evaluate raw materials, ingredients, and alternative suppliers to improve product quality and cost efficiency.
7. Collaborate with Kitchen, Operations, Purchasing, and Cost Control teams to ensure successful product implementation.
8. Develop and maintain recipe documentation, standard operating procedures (SOP), and product specifications.
9. Conduct product testing and evaluate shelf life, storage methods, and food safety requirements.
10. Support menu launches, product improvement, and kitchen training across multiple restaurant brands.
Qualifications
1. Minimum D3/S1 in Culinary Arts, Food Technology, Food Science, Hospitality, or related fields.
2. Minimum 2–3 years of experience in Food R&D, Product Development, Culinary Development, or similar positions within the F&B industry.
3. Strong understanding of cooking techniques, ingredients, food preparation, and recipe development.
4. Good knowledge of Food Technology/Food Science, including food processing, ingredient functionality, food safety, and product quality.
5. Experienced in recipe costing, food cost calculation, yield analysis, and portion control.
6. Good understanding of kitchen management, kitchen operations, and production workflow.
7. Able to develop and standardize recipes while maintaining consistent taste, texture, presentation, and product quality.
8. Familiar with product testing, sensory evaluation, shelf-life considerations, and food safety standards.
9. Proficient in Microsoft Excel for costing, recipe documentation, and data analysis.
10. Creative, analytical, detail-oriented, and able to work collaboratively with cross-functional teams.
11. Experience in multi-brand or multi-outlet restaurant operations is preferred.
