As the Operational Manager at PT Wallace Food Indonesia, you will play a crucial role in shaping the future of our business operations. Your key responsibilities include developing and implementing operational strategies that align with the company's objectives, overseeing the day-to-day operations to ensure efficiency and compliance, managing projects from conception to completion, optimizing business processes to enhance productivity, and analyzing data to identify trends and areas for improvement. You will work closely with various departments to streamline workflows, reduce costs, and improve overall performance. Additionally, you will be responsible for setting and monitoring key performance indicators (KPIs) to measure the success of operational initiatives and drive continuous improvement.
KEY RESULT AREAS
- Market & Network Plan
- Build 3-year pipeline: cities, trade-zones, store formats (inline, drive-thru, food-court, container).
- Benchmark competitors’ footprint, rent, sales density; translate into Wallace density model.
2. Site Acquisition & Opening
- Lead cross-functional team (RE, Construction, SCM, Marketing) to secure A-grade sites < 90 days from LOI → handover.
- Deliver “zero-delay” openings; achieve 100% of target sales in first 30 days.
3. Store Operations & P&L
- Full P&L ownership for all stores;
- Daily management of COGS, labor, utilities, waste; implement lean-OPS playbook (SOP, labor matrix, prep calendar).
4. Recruit, train, retain store managers & district managers; Build local management pipeline; 80 % internal promotion for new SM openings.
5. Food Safety & Compliance
MUST-HAVE EXPERIENCE
- At least 5 years in multi-site QSR operations, incl. ≥ 3 years at Area/Region Manager level (≥ 30 stores) in global brand Fast Food industry or comparable Indonesian national chain.
- Proven record opening ≥ 20 new stores from scratch (site hand-over → GRAND opening).
- Hands-on knowledge of Indonesian F&B regulations, Halal certification, BPOM, local permits.
- Fluency in English and Bahasa Indonesia (spoken & written); additional Mandarin is a plus;
- Bachelor’s degree (Hospitality / Business / Food Technology / Industrial Engineering); MBA is a plus.
