Job Description
- Take initiative to study and fully understand all menus, including daily specials and limited-availability items. Attend food and beverage training to gain in-depth knowledge of ingredients and preparation methods in order to confidently describe dishes and drinks to guests when required. Continuously develop skills and knowledge in menu engineering.
- Ensure that the Sequence of Service is followed by all team members. Check the availability and condition of all menu books and replace or update them when necessary.
- During service, coordinate kitchen pass operations to ensure effective task management among the runner team while maintaining consistent food quality and presentation standards.
- Recognize and acknowledge regular guests and communicate their preferences to the Duty Manager.
- Carry out restaurant setup, including but not limited to daily cleaning; cleaning and dusting tables, chairs, and fixtures; polishing glassware and cutlery; folding napkins; checking menus and replacing covers or inserts when required; preparing wine buckets and ice; and ensuring rubbish bins are ready for service.
- Ensure the pass section is clean, well organized, and fully stocked with crockery, cutlery, condiments, and all necessary service items.
- Ensure the restaurant is adequately stocked for each shift, including crockery, glassware, cutlery, trays, napkins, and condiments. Report any shortages immediately to the Head Waiter or Manager.
Requirements
- Strong understanding of Sequence of Service (SOS) and food presentation standards
- Good knowledge of menu items, ingredients, and basic food handling procedures
- Ability to coordinate and lead the runner team during service to ensure timely and accurate food delivery
- Strong communication and coordination skills with kitchen and service teams
- Able to work in a fast-paced, high-volume service environment
- Good organizational skills and attention to detail
- Physically fit and able to stand and move for long periods during service
- Willing to work flexible shifts, including weekends and public holidays
