- Strong experience in culinary development and menu innovation.
- Experienced in staff training and team development.
- Good leadership and communication skills.
Job Description :
- Lead menu research, development, and recipe innovation across various cuisines.
- Develop, test, upscale, and prepare recipes for production, including SOPs, portioning, yields, and costing.
- Ensure all new menu items meet company standards for quality, taste, presentation, cost, and nutritional requirements.
- Conduct culinary training for kitchen teams covering menus, SOPs, food safety, and hygiene.
- Conduct kitchen audits and provide recommendations to improve culinary operations, kitchen layout, and efficiency.
- Lead and develop the Culinary Development & Training team, including task allocation and performance monitoring.
- Coordinate with Production, Operations, Cost Control, Supply Chain, and Management for recipe approval and implementation.
- Ensure compliance with food safety, hygiene, company SOPs, and confidentiality standards.
