Commis Hot Kitchen - Cafe Daśa Sanur by Pulau Projects
Job Description
- Preparing, washing, and chopping fresh ingredients (meats, poultry, seafood, vegetables) for the hot line according to standard recipes and portion sizes.
- Assisting the Demi Chef / Chef de Partie in cooking, searing, grilling, frying, and wok-tossing hot dishes during peak service hours to ensure prompt food delivery.
- Operating, cleaning, and maintaining hot kitchen equipment (wok stations, stoves, fryers, grills, ovens) in safe working condition.
- Monitoring food temperature, freshness, and quality before plating, ensuring all dishes meet restaurant standards.
- Strictly practicing FIFO (First In, First Out) for stock rotation, maintaining clear labels/dates, and reporting low inventory levels to supervisors.
- Keeping the hot station clean, organized, and compliant with food safety standards at all times.
Requirements
- Experience: Minimum 1 year of hands-on experience in a Hot Kitchen section at a café, restaurant, or hotel, with proven hands-on experience operating and cooking with a wok. (Fresh graduates with solid internship experience in wok stations are welcome to apply).
- Culinary Skills: Strong knife skills, proficiency in wok cooking techniques (tossing, stir-frying, high-heat cooking), basic knowledge of essential hot kitchen techniques (sautéing, grilling, frying), and kitchen portion control.
- Hygiene & Safety: Deep understanding of personal hygiene, cross-contamination prevention, and safe food-handling practices.
- Attitude: High motivation to learn, open to constructive feedback, and capable of taking initiative in a fast-paced environment.
- Teamwork & Stamina: Able to work well under pressure alongside the kitchen brigade, maintaining focus and physical stamina during high-volume service shifts.
- Flexibility: Willingness to work flexible hours, including split shifts, weekends, and public holidays.
