Position Summary:
We are looking for a skilled, creative, and leadership-driven Chef de Partie (CDP) Pastry to run our pastry section in Uluwatu, Bali. In this role, you will be responsible for overseeing the daily operations of the pastry kitchen, ensuring the highest standards of dessert production, and supervising junior kitchen staff. Key Responsibilities:
Section Leadership: Manage and oversee the daily operations of the pastry and baking section.
Production & Execution: Prepare, bake, and finish high-quality desserts, pastries, and artisanal baked goods according to restaurant standards.
Quality Control: Ensure consistency in taste, texture, and visual presentation for all items leaving the pastry section.Staff Supervision: Train, guide, and supervise junior pastry cooks, stewards, and trainees in daily tasks and recipes.
Inventory & Ordering: Monitor stock levels of pastry ingredients, manage daily ordering requests, and minimize food waste.
Menu Development: Collaborate with the Pastry Chef or Head Chef to test, develop, and implement new dessert menus or seasonal specials.
Food Safety & Hygiene: Enforce strict food hygiene, sanitation, and safety standards (HACCP principles) within the pastry station.
Station Maintenance: Ensure all pastry equipment, tools, and cold storage units are clean, organized, and properly maintained.
Service Coordination: Coordinate seamlessly with the hot kitchen and front-of-house teams to ensure smooth and timely dessert service.
Qualifications & Skills:
Experience: Minimum 2–3 years of experience as a Pastry Cook, Commis, or Demi CDP in a high-volume restaurant, beach club, or resort.
Technical Skills: Strong mastery of pastry techniques, doughs, chocolate work, baking fundamentals, and modern plating styles.
Leadership: Proven ability to lead a small team, delegate tasks efficiently, and handle high-pressure service periods calmly.
Language: Good conversational and written English skills to communicate.
Detail-Oriented: Exceptional attention to detail regarding recipe accuracy, presentation, and portion control.
Flexibility: Ability to work flexible shifts, including early mornings, evenings, weekends, and public holidays.
