Prepare and cut various types of meat (beef, pork, and others) according to Korean BBQ standards, including thin slicing, portioning, and attractive presentation.
Handle premium cuts such as striploin, tenderloin, short rib, brisket, and other BBQ cuts while maintaining consistent quality.
Ensure proper marination preparation when required according to kitchen recipes and standards.
Maintain proper storage and handling of meat products in chillers and freezers, following FIFO (First In, First Out) procedures.
Monitor meat stock levels and report daily usage, shortages, or quality issues to the Kitchen Supervisor or Head Chef.
Perform receiving checks for meat deliveries, including freshness, temperature, packaging condition, and accuracy.
Maintain cleanliness, sanitation, and organization of the butchery area, equipment, knives, slicers, and cutting boards.
Minimize waste by utilizing meat efficiently and maintaining proper trimming techniques.
Support the kitchen team with preparation during busy operations when needed.
Follow food safety, hygiene, and kitchen safety standards at all times.
