Key Responsibilities:
Masterful Creation: Lead the daily production of our core menu of traditional sweets, including but not limited to: various types of mochi (daifuku), dango skewers (mitarashi, anko), and dorayaki.
Seasonal Innovation: Develop and introduce a rotating menu of seasonal wagashi (e.g., sakura-mochi in spring, kuri-manjū in autumn) that reflects the Japanese aesthetic of celebrating nature's cycles.
Quality & Consistency: Maintain the highest standards of taste, texture, and appearance for every item, ensuring an authentic and consistent experience for our guests.
Recipe Development & Costing: Refine existing recipes and create new ones, managing food costs and inventory for the pastry section without compromising on quality.
Team Leadership & Training: Train and mentor kitchen staff in the specific, delicate techniques required for crafting traditional Japanese sweets.
Kitchen Management: Uphold impeccable standards of hygiene and food safety in the pastry kitchen.
Requirements :
You have 2+ years of experience as a Pastry Cook with a proven portfolio of your work.
You possess a genuine passion for and knowledge of Japanese cuisine and culture. Prior experience making wagashi is a significant advantage.
You understand the delicate balance of flavors in Japanese desserts—not too sweet, with a focus on the natural taste of ingredients like red bean, matcha, and rice.
Formal culinary training or a relevant pastry certification is a plus.
Food Safety Certification is required or must be obtained promptly.
