Junior Sous Chef – Pastry (Cakes)

Cafe Mary Grace | Singapore

Cafe Mary Grace is a beloved Filipino café celebrated for its warmth, comfort, and made-with-love food. As we continue to grow in Singapore, we're looking for a skilled and creative Pastry Junior Sous Chef to help lead our pastry program — with a particular focus on cakes.

The Role

This is a hands-on role where you'll work closely with the team to drive the quality, consistency, and creativity of our pastry output. You'll take ownership of our cakes offering, balancing beautiful execution with the heartfelt, approachable spirit that defines Cafe Mary Grace.

What You'll Do

- Handle day-to-day pastry operations with a focus on cakes and entremets production

- Develop, refine, and document recipes in line with brand standards and seasonal direction

- Ensure consistent quality, portion control, and presentation across all pastry items

- Train and motivate junior pastry team members

- Manage ingredient ordering, stock rotation, and wastage control

- Uphold the highest standards of food safety, hygiene, and kitchen organisation

- Collaborate with the culinary team on new menu launches and special occasions

What We're Looking For

- 3–4 years of professional pastry experience, with demonstrated expertise in cakes

- Strong technical foundation — sponge cake, cake layering & frosting, piping techniques, cake decoration and finishing, mousse cake, mirror glaze

- A keen eye for detail and a passion for clean, elegant finishing

- Positive, collaborative attitude with a genuine desire to mentor and develop others
