Role Overview
We are seeking an adaptable and resilient Sous Chef for Le Pirate Island Gili Lontar, an exclusive private island resort off Lombok. Working directly under the Executive Chef, you will lead daily kitchen operations, deliver luxury dining for VIP guests, and master inventory management amidst remote island logistics.
Key Responsibilities
- Kitchen Operations: Oversee daily prep and service, ensuring top-tier fine-dining standards for exclusive resort guests.
- Logistics & Inventory: Manage stock, cold storage, and zero-waste controls tailored to weather-dependent mainland supply schedules.
- Menu Development: Collaborate on versatile, high-quality menu concepts using available seasonal ingredients, adapting flexibly to guest preferences and supply conditions.
- Team Leadership: Mentoring and motivating a small kitchen team to maintain high morale and strict HACCP standards in a remote setting.
- Guest Engagement: Conduct guest-facing culinary experiences.
Requirements
- 2–3 years of experience as a Sous Chef or Senior CDP; prior background in remote resorts, cruise ships, or island environments preferred.
- Mental resilience and adaptability to live and work in an isolated environment.
- Strong problem-solving skills to improvise menus when supply boat deliveries are delayed.
- Strong communication skills to interact comfortably with high-net-worth guests and local suppliers.
