TANGGUNG JAWAB:

Memimpin operasional dapur harian dan menggantikan Executive Chef saat beliau tidak bertugas
Mengawasi seluruh section: pasta, hot kitchen, cold kitchen dan dessert
Memimpin briefing sebelum service dan memastikan setiap station siap tepat waktu
Menjaga konsistensi rasa, porsi dan plating sesuai standar resep
Mengontrol food cost, mengelola stok dan meminimalkan food waste
Melakukan training dan penilaian terhadap CDP, Demi CDP dan Commis
Memastikan standar kebersihan, sanitasi dan HACCP dijalankan seluruh tim
Berkoordinasi dengan tim service untuk kelancaran food flow
