Kualifikasi:

  • Memiliki pengalaman minimal 2 tahun di bidang Food & Beverage, khususnya pada masakan Indonesia dan menu tradisional Nusantara.
  • Memahami operasional dapur secara menyeluruh, mulai dari perencanaan produksi, proses pengolahan, hingga pengendalian kualitas makanan.
  • Memiliki pengetahuan yang baik mengenai berbagai jenis soto Nusantara dari berbagai daerah serta mampu mengolah beragam menu masakan Indonesia.
  • Memahami karakteristik dan teknik pengolahan makanan khas Makassar, seperti Jalangkote, Nasi Goreng Merah, Mie Titi, dan menu khas lainnya.
  • Mampu menyusun dan mengembangkan standar resep (recipe standardization) serta melakukan perhitungan food costing secara akurat.
  • Memahami penerapan standar Hygiene, Sanitasi, dan Keamanan Pangan (Food Safety).
  • Memiliki kemampuan leadership, pengawasan tim, serta pengelolaan operasional kitchen sehari-hari.
