Job description for Sous Chef Pastry & Baker at Common Grounds Coffee Roastery

Job Description :

- Membantu Head Chef/Executive Chef dalam mengelola operasional harian area pastry dan bakery.

- Mengawasi proses produksi pastry, bakery, cake, dessert, dan produk pendukung lainnya.

- Memastikan seluruh produk memenuhi standar kualitas, rasa, tekstur, presentasi, dan konsistensi.

- Mengontrol proses persiapan, produksi, penyimpanan, dan distribusi produk.

- Memastikan seluruh resep dan SOP dijalankan dengan baik oleh tim.

- Membantu mengembangkan menu baru, seasonal products, dan inovasi produk pastry & bakery.

- Melakukan trial recipe dan evaluasi kualitas produk.

- Mengikuti tren industri pastry, bakery, dan dessert untuk meningkatkan daya saing brand.

- Mengontrol penggunaan bahan baku dan meminimalkan waste.

- Melakukan stock monitoring dan inventory control.

- Membantu pengelolaan food cost dan production cost agar sesuai target perusahaan.

- Berkoordinasi dengan tim purchasing terkait kebutuhan bahan baku.

Requirements :

- Minimal SMK Tata Boga, Pastry & Bakery, atau Diploma/Sarjana di bidang terkait.

- Minimal 3–5 tahun pengalaman di bidang Pastry & Bakery.

- Berpengalaman menangani produksi pastry dan bakery dalam skala komersial.

- Menguasai teknik pembuatan roti, viennoiserie, cake, pastry, dessert, dan bakery products lainnya.

- Memahami proses fermentasi, proofing, baking, decorating, dan finishing produk.

- Memahami food cost, inventory control, dan kitchen management.

- Mampu membuat standard recipe dan production planning.

- Kreatif dan memiliki passion dalam pengembangan produk.

- Memiliki kemampuan problem solving yang baik.

- Teliti, disiplin, dan berorientasi pada kualitas.

- Mampu bekerja di bawah tekanan dan target operasional.
