Senior Coffee Roaster

Job Summary

PT Boncafe Indonesia is seeking an experienced Coffee Roaster to join our roasting operations. The ideal candidate will have a deep understanding of coffee roasting profiles, green bean sourcing, quality control, and production efficiency. This role is critical in ensuring the highest quality of roasted coffee that meets the standards of our customers, including hotels, cafes, and restaurants across Indonesia.

Key Responsibilities:

Green Bean Management

- Work with the factory manager to manage green coffee inventory, ensuring stock levels align with production schedules.

- Work with suppliers and Country Manager to source high-quality green beans and maintain good supplier relationships.

- Develop an understanding of Robusta and Arabica blends, as well as origins, to craft unique roast profiles.

Roasting Operations & Quality Assurance

- Join in the daily coffee roasting operations, ensuring consistency and quality across all roast profile

- Develop, refine, and implement roasting profiles to match market trends and customer preferences.

- Perfect our existing QA controls to ensure quality and consistency in every batch of roasted coffee, maintaining Boncafe's Quality Assurance promise to our customers.

- Monitor and maintain roasting equipment to ensure optimal performance and minimal downtime.

- Collaborate with the quality control team to cup and evaluate roasted coffee for flavor, consistency, and defects.

- Continuously seek innovations and improvements in roasting techniques and production processes.

Custom Roast & Client Requirements:

- Understand the requirements of clients across the spectrum of customers of Boncafe.

- Develop custom roasts and blends to meet the requirements of key accounts, budget and flavour profile.

- Adapt roasting techniques to suit various customer needs, ensuring high satisfaction and product consistency.

Training & Team Development

- Train and mentor junior roasters and production staff, ensuring knowledge transfer and skill enhancement.

- Maintain an open mind, be passionate about sharing the craft with the team, and foster a collaborative and work environment.

- Encourage an inquisitive and innovative mindset within the team, with an attitude of constant improvement.

Workplace Safety & Compliance

- Ensure compliance with food safety standards, hygiene regulations, and workplace safety procedure

- Implement and maintain best practices in handling and storage of green and roasted coffee to prevent contamination.

- Promote a culture of workplace safety, ensuring the safe use of roasting and production equipment.

Requirements:

- Minimum 5 years of experience in specialty coffee roasting.

- Strong knowledge of coffee varieties, processing methods, and roasting techniques.

- Hands-on experience with various roasting machines, specifically Probat, and Diedrich but other drum roasters also accepted.

- Ability to cup and evaluate coffee with excellent sensory skills.

- Experience in green coffee sourcing and inventory management is a plus.

- Understanding of quality control procedures and roasting software.

- Strong organizational and leadership skills.

- Passion for coffee and a deep understanding of coffee culture and market trends.

- Experience with ISO and HACCAP preferred

- Proficiency in English and Bahasa Indonesia is preferred.
