Job description for Pastry Chef at Toby's Estate Indonesia
Qualifications
• Have an educational background in the culinary or hospitality fields
• 2 years experience working in a bakery
• Proficiency in using industrial baking ovens, mixers, proofers, etc.
• Expertise in a wide range of baked goods, such as breads, pastries, cakes, cookies, and specialty items.
• Ability to manage and motivate a team, delegate tasks, and resolve conflicts.
• Understand quality consistency, portion control, and aesthetics of baked goods.
• Familiarity with food safety regulations.
Responsibility
• Oversee and manage the preparation and baking of all products.
• Test new recipes and develop seasonal or signature products.
• Ensure consistency in quality and adherence to recipes and production schedules.
• Monitor inventory levels of raw ingredients and make procurement recommendations.
• Supervise and train other bakers and kitchen staff, ensuring they follow established procedures.
• Maintain inventory control of baking ingredients, packaging materials, and supplies.
• Ensure the bakery is well-organized and clean, maintaining a safe and efficient workspace.
• Monitor cost control to ensure that labor and ingredient usage stay within budget.
• Prepare reports for management on production performance and inventory levels.
• Placement in The Breeze BSD.
Started in the coffee plantations of Brazil, Guatemala and Columbia, Where Founder, Toby Smith learnt to grow, roast and cup coffee at the source. Inspired by what he had learnt, Toby returned home and converted his mum's garage into a roastery and got to work mastering the art of speciality coffee roasting.
