About the opportunity
Our client is an established, independently owned bar and restaurant in South Bali with a loyal guest base, live music programming and a strong evening trade. The venue is entering a structured growth phase with dedicated support on hiring, operations, marketing and revenue. They are looking for a commercially minded Operations Manager who will own the numbers, not just the floor.
What you will own
- Revenue: Deliver a monthly revenue target, starting from the current base of IDR 250M+ and growing to +30% within 12 months, through covers, average spend and a new daytime trade.
- Profitability: Keep prime cost (food + beverage cost + labour) within target; manage purchasing, stock counts, wastage, voids and comps.
- Daytime operations: Build and run the daytime service (menu, staffing, flow) as a new revenue stream, as the bar currently runs 1900 to 0400 hours.
- Team: Lead, roster and train a front- and back-of-house team of 20–30; run daily briefings, SOP audits and performance reviews.
- Guest experience: Hold a 4.5+ Google rating, grow review volume and resolve complaints within 24 hours.
- Controls & reporting: Daily sales and cash reconciliation, weekly KPI report, monthly P&L review with the owner.
What you bring
- 5+ years in F&B, including 2+ years as Operations Manager, Assistant GM or Outlet Manager in a bar, beach club or high-volume restaurant.
- Hotel School Diploma/Degree, with relevant experience as a manager for 3+ years of a standalone venue or a bar/resto of a branded hotel.
- Proven record running a venue of IDR 200M+ monthly revenue — you can show the numbers you moved.
- Working P&L knowledge: cost of goods, labour %, stock control, pricing and menu engineering.
- Confident with POS reporting and spreadsheets (Excel / Google Sheets).
- Fluent Bahasa Indonesia and good spoken and written English.
- Experience in Bali hospitality strongly preferred. Indonesian nationals or holders of a valid work permit.
