Summary
HonoBono Kissa, part of Chontea & Co., brings the nostalgic charm of the Japanese kissaten to Jimbaran. By day it's a relaxed café built around Hotto Keki, Napolitan pasta and manually brewed coffee; by night it becomes an intimate lounge with classic cocktails, premium whiskey and fine wine, set to jazz and vinyl records. It's a place built around slowing down, listening, sipping and savouring.
As Junior Pastry Chef, you will create desserts and light, bite-sized pairings that complement HonoBono's tea and beverage offerings, bringing an understanding of Japanese culinary principles into every dish while growing your craft within a collaborative kitchen team.
Job Description
- Develop and create a seasonal pairing menu that complements HonoBono's tea offerings, across both savoury and sweet options
- Craft desserts and light, bite-sized pairings as a particular focus of the role
- Cook with an understanding of basic Japanese recipe principles and techniques
- Train bar back staff in plating techniques and presentation standards
- Establish and uphold SOPs for the food department
- Collaborate with the team to grow the food department, contributing to R&D and menu development within HonoBono's Brand Guidelines
Requirements
- Passion for Japanese cuisine and culinary arts, with an understanding of basic Japanese cooking principles
- Experience creating desserts or light bites is a plus
- Able to work collaboratively and communicate effectively with the team
- Eager to learn and improve through ongoing training
- Indonesian national or holder of a valid KITAS
