Rise & Grind Bali is a specialty café opening soon in the heart of Uluwatu, Bali. Our vision is to create a welcoming destination for both locals and international visitors through exceptional food, specialty coffee, and genuine hospitality.
With a customer base expected to consist primarily of international guests, surfers, digital nomads, expatriates, and tourists, we are seeking a talented Head Chef with strong experience in Mediterranean-inspired cuisine, European café concepts, and all-day brunch menus.
As part of our Opening Team, you will play a key role in shaping the culinary identity of Rise & Grind Bali by developing menus, establishing kitchen systems, implementing SOPs, and building a high-performing kitchen team from the ground up.
Key Responsibilities:
- Lead and oversee all daily kitchen operations.
- Develop, implement, and maintain kitchen SOPs, food preparation standards, recipes, and quality control procedures.
- Create, develop, and continuously improve menus that align with the Rise & Grind brand and appeal to international customers.
- Design and execute all-day brunch, breakfast, lunch, healthy dining, and Mediterranean-inspired menu offerings.
- Ensure consistency, quality, presentation, and portion control of all menu items.
- Supervise food preparation and ensure efficient kitchen workflow during service hours.
- Recruit, train, mentor, and develop kitchen staff to maintain high culinary standards.
- Create kitchen schedules and manage team productivity.
- Monitor food quality and customer feedback to drive continuous improvement.
- Manage inventory, ordering, supplier relationships, and stock levels.
- Conduct regular stock takes and maintain accurate inventory records.
- Control food costs, reduce wastage, and maximize kitchen profitability.
- Ensure compliance with food safety, hygiene, sanitation, and workplace safety standards.
- Maintain cleanliness and organization of all kitchen areas and equipment.
- Work closely with the Store Manager/Owner to ensure operational excellence and alignment with business objectives.
- Provide daily operational reports to the Store Manager/Owner regarding kitchen performance, inventory levels, food costs, staffing matters, and operational challenges.
- Collaborate with management on promotions, seasonal menu launches, special events, and business growth initiatives.
- Support the opening process, kitchen setup, workflow planning, and operational readiness of the café.
Requirements:
- Minimum High School Diploma (SMA/SMK) or equivalent.
- Minimum 5 years of experience in cafés, restaurants, hotels, or hospitality establishments.
- Previous experience as Head Chef, Sous Chef, Kitchen Supervisor, or Kitchen Manager.
- Strong experience in Modern Western, Mediterranean, European Café, All-Day Brunch, or Healthy Dining concepts.
- Experience working in popular café environments serving international customers and tourists is highly preferred.
- Proven experience in menu development for breakfast, brunch, lunch, healthy dining, and café concepts.
- Strong understanding of Western cooking techniques, contemporary food presentation, and international café trends.
- Experience creating menus that cater to international guests, health-conscious consumers, and Bali's lifestyle market.
- Experience in baking, pastries, sourdough, desserts, and café-style kitchen operations is highly desirable.
- Strong leadership and team management skills.
- Experience developing and implementing kitchen SOPs and quality standards.
- Strong knowledge of food costing, inventory management, stock control, and supplier management.
- Excellent organizational, communication, and problem-solving skills.
- Ability to perform effectively in a fast-paced environment.
- Creative, detail-oriented, and passionate about delivering exceptional dining experiences.
- Willing to work shifts, weekends, and public holidays.
