About Our Client:
Butter Protein Club is a biohacker-inspired fitness nutrition hub in Pererenan, Bali, driven by the ethos: "Built for performance. Powered by beef." We serve 100% seed-oil free, animal-based, customizable protein bowls with exact calorie counts in a vibrant, dog-friendly space where we know our regulars by name. As a highly popular spot for the local fitness community, we are seeking energetic, detail-oriented individuals who thrive in a fast-paced environment and can consistently deliver flawless, attentive service during our busiest hours.
What You Will Contribute:
As the Head Chef of Butter Protein Club, you will be the culinary force behind their performance-driven menu. Working directly with the General Manager and the restaurant's ownership, you will ensure the flawless independent execution of their 100% seed-oil free, animal-based concept. Your primary focus will be maintaining strict adherence to exact macro-nutritional and caloric standards while leading a high-performing kitchen team to deliver consistent, top-tier food quality in a highly active environment.
What You Will Do:
- Direct and manage daily kitchen operations, ensuring all food preparation and presentation meet Butter Protein Club's exact quality and nutritional benchmarks.
- Enforce absolute compliance with the 100% seed-oil free and animal-based dietary philosophy across all ingredients and cooking methods.
- Monitor and guarantee the accuracy of exact calorie and macro-nutrient counts for all customizable protein bowls and menu items.
- Lead, train, and mentor the kitchen brigade, fostering a culture of discipline, hygiene, and efficiency during high-volume peak hours.
- Oversee inventory management, portion control, and ordering to optimize Cost of Goods Sold (COGS) and minimize food waste.
- Collaborate with the management team to innovate and develop new, performance-focused menu items that align with the brand's biohacker ethos.
- Maintain rigorous adherence to local health, safety, and food sanitation regulations.
- Coordinate seamlessly with the Front of House team to ensure perfect order customization and prevent missing items during busy service.
Who We’re Looking For:
- Minimum 3–5 years of progressive culinary experience, with at least 1–2 years in a Head Chef or Executive Sous Chef role within a fast-paced, high-volume restaurant.
- Strong understanding of nutrition, macros, and specialized diets (specifically animal-based, keto, carnivore, or biohacker concepts).
- Absolute commitment to operating a strict seed-oil free kitchen environment.
- Proven leadership skills with a track record of effectively training, motivating, and managing kitchen staff independently.
- Exceptional organizational skills and a highly detail-oriented approach to recipe standardization and portion control.
- Solid grasp of kitchen management administration, including food cost calculation, supplier relations, and inventory control.
- Excellent communication skills in both English and Bahasa Indonesia.
