Job description for Eksekutif Chef at Bebek Bengil

Tanggung Jawab Utama

Orkestrasi Kuliner & Presisi Teknis:

Mengendalikan seluruh siklus operasional dapur, memastikan setiap hidangan dieksekusi dengan teknik memasak tingkat tinggi (skill cook), serta mematuhi resep standar dan Standar Operasional Prosedur (SOP) perusahaan secara konsisten tanpa kompromi.

Pengawasan Estetika & Presentasi:

Menetapkan dan menjaga standar visual gastronomi perusahaan. Bertanggung jawab atas kontrol kualitas plating dan sentuhan akhir (garnish) yang estetis, elegan, dan presisi untuk memberikan pengalaman bersantap yang premium bagi tamu.

Kepemimpinan Dapur & Pengembangan Tim:

Mengarahkan, memotivasi, dan mengevaluasi kinerja seluruh staf dapur. Ini mencakup pendelegasian tugas yang strategis selama jam operasional padat (peak hours), serta merancang program pembinaan untuk meningkatkan kompetensi dan standar kerja tim.

Komunikasi Lintas Divisi:

Membangun alur komunikasi yang proaktif, transparan, dan efektif. Menjadi jembatan utama antara area Back of House (dapur) dengan Front of House (layanan), Purchasing, dan manajemen operasional untuk memastikan kelancaran alur kerja.

Pembentukan Sinergi Kolaboratif:

Membina budaya kerja sama tim yang solid, positif, dan berorientasi pada solusi. Mampu meredam tekanan di dapur yang bergerak cepat (fast-paced) dan menangani dinamika staf dengan kedewasaan profesional.

Manajemen Inventaris & Kepatuhan (HACCP):

Mengelola efisiensi biaya makanan (food cost), memantau stok bahan baku untuk meminimalisir pemborosan, serta menegakkan protokol kebersihan, kesehatan, dan keamanan pangan global secara ketat di seluruh area kerja.
