Job description for Cold Kitchen at KIMS BAR & KITCHEN
Key responsibilities
- Prepare and produce cold dishes according to recipe standards
- Produce pastry and dessert items
- Perform mise en place, cutting, and preparation of cold ingredients daily
- Maintain consistency in taste, portion, and presentation according to Kim's Bar & Kitchen standards
- Control ingredient quality, store ingredients correctly (temperature, labeling, FIFO), and conduct simple inventory
- Maintain cleanliness of workstation, equipment, and cold kitchen area according to hygiene and sanitation standards
- Assist with plating and presentation of dishes during service
- Collaborate with hot kitchen and service teams for smooth operations
Qualification
- Minimum SMA/SMK Culinary qualification or equivalent (D3/S1 Culinary is a plus)
- Minimum 1 year experience in cold kitchen / garde manger
- Good pastry skills
- Proficient in knife skills, cutting, and food presentation
- Understanding of hygiene, sanitation, and food safety standards
- Detail-oriented, neat, disciplined, and able to work at a fast pace
- Willing to work shifts including weekends
