Job description for Chefs at Seed Bingin
Head Chef – Seed Restaurant, Bingin, Uluwatu
Seed is a farm-to-table Franco-Asian restaurant in Bingin, Uluwatu, open daily from 7 am to 11 pm for breakfast, lunch and dinner. We cook with herbs and spices from our own garden and the best of Indonesian produce, and we also run cooking classes and private events.
We are looking for a passionate Head Chef to lead our kitchen alongside our founder, Simon Maillard.
Your role
Lead the kitchen team and run daily service: breakfast, lunch, dinner and events
Develop and update the menus with Simon, including our Nusantara tasting menu
Write and maintain recipe cards and cost sheets for every dish
Control food cost, ordering, stock and monthly inventory
Apply strict hygiene, food safety and labelling standards
Train, motivate and schedule the kitchen team
Organise kitchen production for events, private dining and special nights
Your profile
Minimum 5 years of experience in professional kitchens, including at least 2 years as sous chef or chef de partie in a quality restaurant or hotel
Passionate about Asian food, with strong knowledge of Indonesian flavours, spices and techniques
Solid classic cooking techniques;
A natural leader who is organised, calm under pressure and enjoys training a team
Comfortable with food cost, ordering and Excel
Good spoken English
