BRIQ Bistro is Hiring — Chef De Partie
The Chef de Partie (CDP) is responsible for managing a specific section of the kitchen (e.g., hot kitchen, grill, pastry, garde manger) and ensuring that all dishes prepared within their section meet the restaurant’s standards of quality, consistency, and presentation. This role plays a key part in maintaining smooth kitchen operations during preparation and service.
Key Responsibilities
1. Section Management
- Manage and oversee a specific kitchen section as assigned.
- Prepare and cook dishes according to standardized recipes and plating guidelines.
- Ensure consistency in taste, texture, and presentation.
- Maintain mise en place readiness before each service.
2. Quality & Food Safety
- Ensure all food preparation complies with hygiene, sanitation, and food safety standards (HACCP).
- Monitor product quality and freshness within the assigned section.
- Properly store ingredients according to FIFO principles.
3. Cost & Inventory Control
- Control portioning and minimize food waste within the section.
- Assist in inventory checks and stock management.
- Report shortages, quality issues, or discrepancies to the Sous Chef.
4. Team Support & Coordination
- Coordinate with other kitchen sections to ensure smooth service flow.
- Support and guide junior cooks and kitchen helpers within the section.
- Follow instructions from the Sous Chef and Head Chef.
- Maintain discipline and professionalism during high-pressure service.
Requirements
- Minimum 2 years of experience as a Demi Chef or Cook in a professional kitchen.
- Strong knowledge of culinary techniques relevant to the assigned section.
- Experience in bistro or fine dining restaurants is preferred.
- Understanding of food safety, hygiene, and kitchen standards.
- Ability to work under pressure in a fast-paced environment.
- Good teamwork and communication skills.
- Strong attention to detail and consistency.
- Culinary degree or formal training is an advantage.
- Willing to work flexible shifts, including weekends and holidays.
