Brock Butchery is a growing premium meat business based in Jakarta, focused on delivering high-quality fresh and frozen meat products through online and offline channels. As our online orders continue to grow, we are looking for an Butcher to support daily operations and ensures fresh, properly portioned meat is available for customers while providing excellent service and maintaining a clean, organized work area.
The Butcher is responsible for preparing, cutting, and handling meat products according to quality, hygiene, and safety standards. This role ensures fresh, properly portioned meat is available for customers while providing excellent service and maintaining a clean, organized work area. You will work closely with the founder and operations team to make sure orders are accurate and professionally handled.
Key Responsibilities
- Cut, trim, debone, grind, and prepare various types of meat (beef, chicken, lamb, etc.) according to shop standards.
- Ensure meat quality, freshness, and proper storage at all times.
- Portion and package meat products accurately based on customer requests.
- Operate butcher tools and equipment safely (knives, saws, grinders, slicers).
- Maintain cleanliness and sanitation of work area, tools, and equipment.
- Follow food safety, hygiene, and health regulations.
- Assist customers with product selection, cuts, and cooking recommendations.
- Monitor stock levels and report low inventory or quality issues.
- Minimize waste through proper handling and storage procedures.
- Support daily opening and closing activities of the meat shop.
Requirements
- Proven experience as a butcher or meat cutter (minimum 1 year experience).
- Strong knowledge of meat cuts, handling, and preparation techniques.
- Understanding of food safety, hygiene, and sanitation standards.
- Ability to work with sharp tools and heavy equipment safely.
- Physically fit and able to stand for long hours and lift heavy items.
- Detail-oriented with good portion control skills.
- Good communication and customer service skills.
- Able to work shifts, weekends, and public holidays.
- Team player with a responsible and disciplined work attitude.
Preferred Qualifications
- Certification in food handling or butchery.
- Experience in retail meat shop, supermarket, or slaughterhouse.
- Basic knowledge of meat storage temperatures and cold chain management.
