What You Will Contribute:
As a Bar Manager at ZALI, you will be responsible for overseeing the overall operation and performance of the bar while remaining actively involved in day-to-day service and beverage preparation.
You will lead the bar team, ensure consistent beverage quality and presentation, manage stock and operational costs, and maintain high standards of service, hygiene, and guest experience. As a hands-on leader, you will also personally prepare and serve beverages during service, ensuring that every drink reflects ZALI's standards and concept. Working closely with the Restaurant Manager, you will help create an efficient, welcoming, and high-performing bar operation that complements ZALI's food, atmosphere, and overall guest experience.
What You Will Do:
- Oversee and manage the day-to-day operations of the bar, ensuring smooth and efficient service.
- Actively participate in bar operations, including preparing, mixing, garnishing, and serving beverages during service.
- Ensure all cocktails, mocktails, beverages, and other drinks are prepared consistently according to established recipes and quality standards.
- Lead, supervise, and coordinate the bar team to ensure efficient performance during daily operations and busy service periods.
- Create and maintain an organized bar workflow, ensuring the team is properly prepared before, during, and after service.
- Conduct daily briefings and communicate operational priorities, menu updates, promotions, and service standards to the bar team.
- Oversee mise en place and ensure all ingredients, garnishes, glassware, equipment, and bar stations are fully prepared before service.
- Maintain consistency in beverage quality, taste, portioning, presentation, and service standards.
- Provide coaching, guidance, and on-the-job training to bartenders, bar staff, and junior team members.
- Monitor team performance and provide constructive feedback to improve service quality and operational efficiency.
- Ensure responsible and accurate handling of alcoholic and non-alcoholic beverages in accordance with company policies and applicable regulations.
- Manage bar inventory, including ordering, receiving, storage, stock rotation, and daily stock monitoring.
- Monitor beverage consumption and maintain appropriate par levels to ensure sufficient stock during operations.
- Control beverage costs, portion sizes, wastage, breakage, and over-pouring to support the restaurant's profitability.
- Conduct regular stock counts and report discrepancies, damaged products, or unusual variances to the Restaurant Manager.
- Work with the Restaurant Manager to develop and improve beverage offerings, including cocktails, mocktails, and other bar selections when required.
- Ensure all beverage recipes, preparation methods, and presentation standards are properly documented and followed by the team.
- Maintain cleanliness, hygiene, sanitation, and organization of the bar area, equipment, storage areas, and workstations.
- Ensure compliance with food safety, hygiene, sanitation, and applicable health and safety standards.
- Monitor and maintain bar equipment, glassware, tools, and facilities, reporting any maintenance or operational issues promptly.
- Handle guest requests, feedback, and complaints professionally and work to resolve issues while maintaining a positive guest experience.
- Collaborate closely with the Restaurant Manager and Food & Beverage team to ensure smooth coordination between the bar, service, and kitchen.
- Support special events, promotions, private functions, and other operational activities as required.
- Continuously identify opportunities to improve bar service, beverage quality, team performance, and overall guest satisfaction.
Who We're Looking For:
- Minimum 3–5 years of experience in bartending or bar operations, with at least 1–2 years in a supervisory or management position.
- Previous experience as a Bar Manager, Bar Supervisor, Head Bartender, or similar role in a high-quality restaurant, hotel, resort, or hospitality environment.
- Strong hands-on bartending skills with good knowledge of cocktails, mocktails, spirits, wine, beer, and other beverage products.
- Strong understanding of bar operations, beverage preparation, service procedures, and hospitality standards.
- Experience managing, supervising, and developing a bar team.
- Good knowledge of beverage costing, inventory management, stock control, and waste reduction.
- Strong understanding of bar hygiene, sanitation, food safety, and safe handling procedures.
- Excellent attention to detail, particularly in beverage quality, consistency, presentation, and portion control.
- Strong leadership and communication skills with the ability to motivate and guide a team.
- Guest-oriented with a genuine passion for hospitality and creating memorable dining experiences.
- Strong organizational and problem-solving skills with the ability to remain calm and effective during busy service periods.
- Positive attitude, strong work ethic, and willingness to be a hands-on leader.
- Creative and open to developing new beverage ideas while maintaining the restaurant's concept and standards.
- Flexible to work shifts, weekends, public holidays, and late-night operations as required.
- Good command of English; additional languages are an advantage.
